Il Violino di Capra
Goat Ham

 In Italy, goats are farmed for food.   Goat cheese and goat meat are eaten.  There is also a goat ham called violino di capra and it is traditionally produced in the northern, Italian region of Lombardia.


The leg of goat is dried and cured like prosciutto crudo.
The name il violino di capra means 'the goat violin.'  It has this name because the leg of goat that makes the ham is similar to the shape of a violin.  When it is sliced, it is held like a violin and the knife appears to be the bow.
